Ingredients


  • 1 tbsp. olive or vegetable oil
  • 1 1/4 lb. (20oz) lean stew meat
  • 1 clove garlic
  • 1 medium onion
  • 1 green pepper
  • 1 tsp. turmeric
  • 1 tsp. sage
  • 1 tsp. cumin
  • 2 cups (300g) baby peas (frozen or canned)
  • 1 lb. (16oz) baby carrots
  • 4 medium potatoes peeled and cut to quarters

Method


  1. Cover the bottom of a large pot lightly with oil. Turn heat on low.
  2. Cut up onion and garlic and add to pot. Heat until onions are soft.
  3. Add the rest of the ingredients, except the water. Let cook for 5 minutes, stirring occasionally, to let the alcohol cook down.
  4. Add water (enough to cover other ingredients). For a thicker sauce, add flour a tablespoon or two at a time. Cover and allow stew to simmer for about 30 minutes on low to medium heat.
  5. Tip: This stew is even better the second or third day, so don’t be afraid to freeze it.
