Ingredients


  • 3-4 slices whole-wheat bread (broken into small pieces by hand)
  • 20 oz. (566g) can crushed pineapple, in its own juice (drain slightly)
  • 2 tbsp. light margarine (to make fat-free, use butter spray)
  • 1/2 cup (85g) brown sugar artificial sweetener or 1/2 cup (85g) brown sugar
  • 1 cup (240g) egg substitute
  • 1/2 cup (113ml) skim or 1% milk

Method


  1. Preheat oven to 350°F (176°C).
  2. Melt margarine. Place in large bowl with milk first, then add all ingredients except bread. Mix, by hand, until well blended.
  3. Add bread and stir.
  4. Pour into an 8”x8” or 9”x9” baking dish prepared with nonstick cooking spray.
  5. Bake for 35-45 minutes or until it appears set and knife comes out clean.
