Ingredients


  • 1-1½ lbs (16-24oz). boneless, skinless chicken breast
  • 1/3 cup (75g) fat-free ranch dressing
  • 1 pkg. (or 3/4 cup (94g) seasoned Panko bread crumbs)
  • Skinny fries: 4 White Rose potatoes
  • paprika and other seasonings, as desired

Method


  1. Chicken: Preheat oven to 400°F (204°C).
  2. Squirt ranch dressing into a large plastic bag. Add chicken and blend.
  3. Dip chicken in the coating mixture and bake on a nonstick aluminum foil-covered baking sheet.
  4. Bake for 25-30 minutes, turning once.
  5. Skinny fries: Preheat oven to 425°F (218°C).
  6. Cut potatoes into thick cut “French fry” size.
  7. Spray a foil-lined baking sheet with nonstick cooking spray.
  8. Spread french fries on pan and add seasoning.
  9. Bake for about 30 minutes, turning frequently.
