Ingredients


  • 6 chicken breasts, approximately 6 oz (170g) each
  • Non-stick spray
  • Salt and pepper
  • Dijon mustard
  • Sprigs of fresh rosemary, basil, and parsley (or your favorite fresh herbs), minced
  • 3/4 cup (130g) tomatoes, diced
  • 3/4 cup (130) mango, diced
  • 1/2 cup (90g) mild green chiles, diced
  • 1/4 cup (25g) scallions, sliced
  • 2 tablespoons lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon cayenne pepper

Method


  1. Preheat oven to 350°F (176°C).
  2. Season chicken with salt and pepper. Spray either indoor or outdoor grill with non-stick spray and grill chicken to mark it for approximately 1-2 minutes.
  3. After marking the chicken, place in large baking dish.
  4. Add a thin layer of Dijon mustard on top of chicken and then add fresh herbs of your choosing.
  5. Bake in oven until internal temperature reaches 165°F (73°C).
  6. Mix ingredients for Mango Chutney and serve on top of chicken breast.
