Fudgy Buttermilk Brownies

We all love to indulge in chocolate but unlike most chocolate recipes this one is made with low fat buttermilk. So whether you decide to ice or not you are sure to enjoy tucking into these.

Ingredients


  • 1 teaspoon vegetable oil
  • 100g (3/4 cup) white flour
  • 50g (1/3 cup) wholemeal/whole grain flour
  • 175g (3/4 cup) soft brown sugar
  • 50g (1/3 cup) cocoa powder (for brownies)
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 medium cooking apple, sliced, gently cooked in a little water and mashed
  • 120ml (4 fl oz) low fat buttermilk
  • 2 teaspoons vanilla essence
  • 150g (1 cup) icing sugar sifted
  • 50g (1/3 cup) cocoa powder (for the icing)
  • 1-3 tablespoons skimmed milk

Method


  1. Preheat the oven to 180°C (360°F).
  2. Lightly grease a 9 inch square baking tray with vegetable oil.
  3. Stir together both flours, sugar, cocoa powder and baking powder.
  4. Separately in another bowl whisk the egg. Add the apple, buttermilk and vanilla extract.
  5. Add to the flour mixture and mix until well blended.
  6. Pour into the baking tray.
  7. Bake for 30 minutes.
  8. If making the icing stir together the icing sugar and cocoa powder
  9. Gradually add the milk until you reach a spreading consistency. Spread over the cooled brownies. When set cut into 16 squares and carefully ease out of the tray.
