Ingredients


  • 1 pound boneless beef sirloin steak about 1/2 inch thick
  • 2 tsp paprika
  • 1 8oz (236ml) container of fat-free sour cream/fat free greek yogurt
  • 2 tablespoons all-purpose flour
  • 1 tablespoon tomato paste
  • 1/2 cup (113ml) low sodium, fat-free beef broth
  • 1/8 teaspoon black pepper
  • 8 oz (236ml) yolk free wide egg noodles
  • Nonstick cooking spray
  • 1 8-ounce (236ml) container of sliced mushrooms
  • 1/2 cup (88g) chopped onion
  • 1 tsp minced garlic
  • Salt to taste

Method


  1. Trim the fat from the beef. Thinly slice across the grain into bite-sized strips then coat with paprika. In a small mixing bowl stir together the sour cream/greek yogurt, flour, and tomato paste. Stir in the broth and pepper. Set aside.
  2. Cook the noodles per package directions. Omit any oil. Drain well.
  3. Meanwhile spray a large skillet with nonstick spray. Preheat over medium heat. Add the onion, garlic and cook until onions are tender about 3 minutes. Stir in the strips of meat and cook for another 3 minutes. Add the mushrooms, cover and simmer for 5 minutes.
  4. Add the sour cream/greek yogurt mixture to the skillet. Cook and stir over medium heat until thickened and bubbly. Serve meat mixture over the noodles.
