Ingredients


  • 1½ pound skinless chicken breast
  • 10 ounce (283g) can Cream of Mushroom Soup
  • 1 cup (250g) fat-free sour cream/fat free greek yogurt
  • 3 tablespoons sherry
  • 8 ounce (226g) can sliced mushrooms, drained
  • 1 cup (150g) frozen peas, thawed
  • 1 small jar pimentos, if desired Black pepper to taste
  • 4 cups (800g) brown rice, cooked

Method


  1. Preheat oven to 350°F (176°C)
  2. Put chicken breasts in a baking dish prepared with nonstick cooking spray.
  3. In a small bowl, mix together soup, sour cream/greek yogurt, mushrooms, and sherry. Pour over chicken and cover.
  4. Bake for 50 - 65 minutes, until bubbly.
  5. Add thawed frozen peas and pimentos (if desired) at the end of cooking.
  6. Allow to sit for 10 minutes.
  7. Serve chicken and sauce over 1 cup (200g) brown rice per person.
